Broccoli is a super healthy food that can provide vital nutrients like folate, calcium and vitamin C for your pregnancy. It is also rich in antioxidants and fiber which keep your body healthy while you’re nurturing the baby in your womb.
You do need to be careful though, of sanitizing and rinsing it thoroughly before eating, to avoid ingesting bacteria or parasites through this type of sprout.
Fun fact: You can mix broccoli with foods high in iron to help your body’s absorption of nutrients!
Broccoli is good for you for many reasons: it boosts your immunity system, prevents anemia, facilitates digestion, helps having healthy vision and among other curious facts it can even protect skin from UV rays! (for you AND your baby!).
Most people think eating broccoli just means boiling it, and this is why not many (especially kids) like it! But in a kitchen nothing is impossible, so we want to share our 3 featured recipes of the week using this vegetable to help it win your heart. (psst psst broccoli also reduces the risk of heart disease 😉 )
Featured recipes:
Cheesy Broccoli Bites – Try the crispy taste of broccoli cooked in an oven. This recipe had us at “crispy” really, but to know that it also involves bacon and cheese makes it impossible for us to not want it right now! Visit The Gourmet RD to find the original recipe.
Spring Veggie Rolls – This recipe involves peanuts for the dipping sauce, but if you are allergic to them you can still enjoy the freshness of spring inside each bite! Check out all the details to prepare it at The Last Food Blog.
Stove Top Pineapple Broccoli Mini Pizzas – The vegan choice of the week! We could easily eat at least two of these (…well ok, maybe three) because it is so light and full of flavor that it gives many other pizzas a run for their money (homemade tomato sauce with chickpeas? Yes please!). Check out this delicious treat at Calm Mind Busy Body.
